Should eggs go into cold or boiling water?
This calculator assumes eggs are lowered into already-boiling water — the timing is shorter and more repeatable. Starting in cold water adds roughly 3–4 minutes and makes shells slightly harder to peel.
Why does altitude change boiling time?
Water boils at lower temperatures as air pressure drops — about 1 °C less for every 300 m of elevation. At 2,000 m your 'boiling' water is only ~93 °C, so everything cooks slower.
Why an ice bath for hard-boiled eggs?
Plunging eggs into ice water stops carryover cooking and rapidly shrinks the egg away from the shell membrane, which is the classic trick for easy peeling.
