Should I roast meat at a fixed temperature?

These times assume a 180 °C (350 °F) oven. Always verify doneness with a meat thermometer at the thickest part rather than relying on time alone.

Should I cook by time or by temperature?

Temperature. Thickness, bone, and starting chill change cooking time greatly; a thermometer hitting the safe internal temp is the only reliable test.

Why rest meat after roasting?

Resting 10–20 minutes lets juices redistribute. Cutting early loses moisture onto the board instead of in the meat.
