How does temperature affect proofing?

Yeast activity roughly doubles for every 8 °C increase. Dough at 16 °C takes about twice as long to proof as dough at 24 °C.

What temperature is best for proofing bread?

24–27 °C is the sweet spot for most lean doughs. Colder slows yeast but builds flavor; above 32 °C can weaken the dough.

Can I proof dough overnight?

Yes — retard it in the fridge at 4 °C for 8–24 hours. Cold fermentation improves flavor and makes high-hydration dough easier to shape.
